Uncle's first pizza was exactly what it was — a first attempt. It led to a second, and a third, and years of refining that followed. Not for a business, not for a paycheck, but out of a love of food and a drive to make it the best it could be. In the Italian family, food is at the center of everything. A meal is a labor of love. That love went into every pizza, every time — as did the effort to make it truly great.
Over the years, the pizza kept improving. Every gathering produced feedback, and every batch reflected it.
Over time, two things became clear. The thinner the crust, the more people loved it. The more flavorful the sauce, the more they came back for another slice. And eventually it all came together — the perfect balance of sauce, cheese, and toppings on a thin, crispy crust that people hadn't experienced before.
In 2020, COVID changed a lot of things — including the careers of Uncle and his son Josh. They decided to turn the recipes into a business. Not a restaurant; that's a different kind of hard. Instead they started at farmers markets, selling to real people and watching the reaction. It wasn't about collecting opinions. It was proof of concept — and the product held its own. Now they needed a plan.
Within a year, Uncle found his market. Small alcohol-licensed establishments — wineries and wine bars first, then breweries, taprooms, meaderies, cideries, and distilleries — that don't have the space or budget for a kitchen but need to offer food to keep guests at the table and sell more of what they do best.
